Baked Tomato Sauce

Smitten Kitchen recipe for baked tomato sauce. I added roasted asparagus.

Oh my god, that looks fantastic.

Oooh, I think we’ll be having this tonight, maybe with a side of kale.

My only caution with this recipe – the tomatoes should be as sweet and ripe as possible. A few of them were not quite as ripe as the rest and they came out tasting a bit bitter after roasting. I am also going to try leaving a few of them uncovered the next time I make this to see what difference it makes. The recipe (original and Smitten Kitten versions) don’t say what to do with the basil – I threw it on the tomatoes when they came out of the oven. This was aesthetically questionable, since it turned black. Next time I might let the tomatoes cool a bit, and I’d prefer to shred the basil than tear it into pieces. This made three main dish servings for my parents and me.
